How long have you worked for the Normandy Hotel and what do you do?

I have worked at the Normandy Hotel for 14 years. I started as a Chef de Partie and worked my way up to Head Chef

What do you like about working at the Normandy Hotel?

I like the adventure and every day is different. Great staff and team and we recently launched a new menu which we are very proud of and hope it goes well. I love cooking for our guests and getting their feedback

What’s a typical day like for you?

I come in and look at the day events, set team up for the day then its lunch set up and dinner prep and service. I enjoy working closely with my team and providing great food to our guests

What’s your best memory of working at the Normandy Hotel?

Winning the Best Restaurant award from Holiday Extra and winning awards for ‘Scotland’s Best Entertainment Venue’ and ‘Scotland’s Best Tribute Venue’

What do you enjoy doing outside of work?

Family time with my wife Vicky and son Lewis and playing loads of golf when I have the time
